The Perfect Hard Boiled Eggs

 

We all have made hard boiled eggs where the shell wouldn’t peel easily. What is the trick? After years of testing multiple theories and by searching the internet, I found a few techniques that have proven to be successful every time.

Three Musts When Boiling Eggs:
Eggs must not be fresh! 10 days old is the average. (Do not use eggs that are expired.) Do not boil eggs for longer than necessary. After cooking, let the eggs rest in an ice-bath for roughly 5 minutes.

Ingredients

  • Raw eggs

  • Water

  • 1 tbsp. salt (optional)

Directions

  1. Place raw large eggs in medium saucepan and cover with at least 2 inches of cold water.

  2. Add 1 tablespoon of salt. (Optional. Salt helps solidify the proteins within the egg making them easier to peel but it does not affect the egg’s flavor.)

  3. Place the pan over high heat on your gas range until it reaches a boil.

  4. Turn heat on lowest setting, cover, and let sit for 13-15 minutes.

  5. Remove eggs from the pan and place them in an ice-water bath for roughly five minutes.

  6. *Note, if you are using medium sized or fresh yard eggs, you may want to let sit on low heat for 11-13 minutes.
